Sandwich-maker Potbelly is opening its first European store in Stratford’s The Street in July.

The chain, which specialises in “legendary Chicago sandwiches”, started life as a Chicago antiques store in 1977 before transforming into a restaurant.

Akbar Sheikh, director at Sheikh Holdings, which has taken over the Potbelly franchise, says it’s time to expand beyond its strong American reputation.

“There were a number of factors behind choosing Stratford,” he said. “Part of it was Westfield shopping centre, which we’ve also seen in the United States.

“But we also really believe in Stratford as an area and in the redevelopment that’s going on.

“We really bought into the story of Stratford as an affordable area to work from, and we’ve seen lots of businesses moving away from the city and Canary Wharf.

“I think there’s a lot of opportunity for us as a brand to serve the local community.”

Mr Sheikh also praised the transport links that Stratford provides, and said that the Crossrail project was going to have a “significant impact” on the surrounding area.
