Try this trout dish

Reader Gillian Tully serves up this recipe for Trout in Coleslaw, ideal for camping or BBQ

Ingredients:

2 Whole Trout

1/2 Bag coleslaw (without dressing)

1 tsp. oil

salt & pepper

Method:

Lay out a piece of aluminum foil. Toss the coleslaw with the oil. Place a layer of coleslaw on the foil as a bed for the trout. Salt and pepper the inside and outside of the trout and lay it on top of the coleslaw.

Make sure the foil is large enough to pull the sides up to fold into a packet. Poke some holes in the top with a fork and place on a grill over the hot coals for 20-30 minutes, depending on the size of fish and the heat of your campfire.

Open and serve the trout with the cooked coleslaw. If you like, you can take the rest of the coleslaw in the bag and mix it with the dressing and enjoy that too!

Serves 2 happy campers.
